    Nitrogen Cavitation is the process whereby a closed container is infused with oxygen-free nitrogen which increases the pressure dramatically. The extreme pressure forces the nitrogen into the content’s cell membranes. When the pressure is suddenly released, the nitrogen rapidly bubbles out, rupturing the cell walls and releasing the contents of the cell.

    This process ties into creating flavor infused dishes and drinks because when the cell contents release, the taste that is kept within the cells diffuse at a speedy rate throughout the solution. In this way, the process of steeping, soaking, and marinating items for weeks can be accomplished in minutes.

    For example, a vanilla flavored vodka can be easily made by placing a vanilla bean in a cream whipper, pressurizing it, and letting the flavor of the vanilla bean disperse throughout the vodka. Homemade flavored sparkling water can be made in a similar fashion, and even cucumbers that take weeks to brine can pickle within minutes using this AmazeChef device.
